Katie's Corner: Going Bananas!

Hello there! It’s Katie from The Sneaker Store with a quick and easy recipe to fuel your long days and long runs! This cold, wintry weather means the oven is getting lots of use. On Sundays, I typically find myself in the kitchen baking easy breads and treats to last through the week. I have had some successes and failures experimenting, but I promise I'll only share my greatest, most healthy creations!
Being a college student means having little time to make a good breakfast before class or practice. This got me thinking in the kitchen when coming up with a breakfast option that is a fan favorite but also something that contains ingredients that are laying around my kitchen. The first thing that came to mind was banana bread! Bananas have awesome nutritional benefits for runners, and you can’t beat the taste of this recipe. Open your cabinets, because you probably have these ingredients… Bananas, old fashioned rolled oats, pure maple syrup, eggs, baking soda, and cinnamon!
6 Ingredient Banana Bread
3 medium ripe bananas
2 cups old-fashioned rolled oats
2 large eggs
¼ cup pure maple syrup
1 teaspoon baking soda
Cinnamon (sprinkle on top as desired)
Optional fruits: Blueberries or strawberries
1. Preheat oven to 350°F. Lightly grease 9x5-inch loaf pan with non-stick cooking spray (or coconut oil) and set aside.
2. Add all ingredients to a blender and blend until smooth and well combined. Pour batter into prepared loaf pan. (Garnish the top of the batter with thinly sliced banana, if desired) Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
3. Let loaf cool completely in loaf pan. Store bread in an airtight container in the refrigerator.
Optional toppings: Peanut butter, almond butter, honey, or chocolate peanut butter!
